Handmade traditional cheeses are living things that mature at different rates and are vastly different to the mass produced cheeses. They have their own individual and unique character, as they are made separately in a single batch. The feature (exterior and internal) of each cheese within each batch will be different even though the same procedures are undertaken to make the same cheese. This variation is due to environmental conditions not being the same from day to day.

Before purchase it is best to try the cheeses so the individual “daily” taste and aroma of the cheeses can be experienced and an informed purchasing decision can be made.
